These pancakes are super easy, healthy and good.. They don't even need syrup and can be frozen and heated in the microwave... I use a box dry mix to start it and add ingriedients..

Oatmeal Cookie Pancakes..

2 cups bisquick or instant pancake mix
2 envelope instant oatmeal... flavored or not.. I use milk to make in microwave..

2 eggs
1 tsp. of vanilla
1/2 c. of applesauce or 1 really ripe banana *omit oil
4 tblspoons brown sugar
1 tsp. cinnamon

Combine dry ingredients and whisk together..
Make instant oatmeal according to directions and add 2 eggs beaten.. Combine and fold into dry mixture.. Do NOT overmix.. It should have lumps...

Heat pan/griddle and make pancakes.. They should be light and fluffy and taste like oatmeal cookies.. They have double the fiber and don't need syrup.. I make these for my kids all the time....

itt is the same mixture as a Yorkshire Pudding or as we say down in the south of england batter pudding . Mix 4 ozs of flour, plain or self raising with an egg beaten with milk stir thoroughly ,let it rest for half an hour then stir again. If you are making sweet pancakes put a knob of butter in a frying pan and when butter has melted place a dessert spoonful of the batter and sprea it out so that you have a very thin pancake, fry for i min and toss or turn thr pancake and cook it for i min. These can be frozen. If you are making sabvoury pancakes use a small amout for each pancake. The oil must be very hot as should the butter. To make a savoury batter use beer instead of milk.

2-1/4 cups milk (or buttermilk)
3 eggs
4 tbsps melted butter or oil

Mix everything up until just moistened and start making pancakes! You can add fruit or whatever you want.

Use Bisquick, all you usually have to add is water or milk, mix it and cook them up. They are pretty tasty too!
