Halibut is a light tasting fish that is easy to cook.

Place a halibut filet in tin foil with a pat of butter, a sprig of parsley and a few lemon slices on top of it. Bake 12-15 minutes at 425 degrees.

Orange roughy is one of the best mild fishes widely available. You may pay a little more for it but it has very little shrinkage. Next in line would be sea bass (at least for me). Good fresh fish should not smell "fishy" in fact it should have very little odor.

I am not sure in your area but Sea Bass, Red and White Snapper, Mahi Mahi and Triger Fish are my favorite.
