No oil in basic bread.
If oil is at all needed, olive oil add some great flavour.

I prefer peanut or rice bran oil. Like olive oil, they are mono-saturated oils, but unlike olive oil they don't add taste to the bread. However, if I'm making an herb loaf I do use olive oil because I want its flavor in the bread.

You are talking about making fresh bread? I use sunflower oil most of the time, and olive oil once in a while.

Butter impartts the best flavor but, you can use vegetable oil or Crisco. Each type oil has an effect on the texture of the bread as well as flavor.
