Just to make it interesting no god or jesus answers please. While I know it would be many or your first choices, it would make for a very boring set of answers.
So that leaves a whole lot of people left to choose from, so pick anyone, scientists, philosophers, church fathers, political figures.
For me I think i would chose, Sir Isaac Newton. He was a genius among geiuses, and mad as a hatter. For all of the work he is famous for, wasted more than half his career obsessing over alchemy. Fascinating man.

Jacob--aka Israel.
He was the father of the Israelite nation, but he was a dubious S.O.B. He basically cheated his way through life, and God still blessed him. He basically told God what to do in a couple of instances (no doubt that God was humoring him, but even that kind of audacity is pretty impressive). And he married two sisters--how cool is that by contemporary standards? (We'll just forget about the fact that they were his first cousins, for now.)
As far as non-religious, I'll go with Lewis Carroll--only because I am fascinated with how a man could have such a compelling, platonic obsession for young girls. Must have been the opium.

I'd also like to have hung out with Oscar Wilde, Bertrand Russell, Mary Wollstonecraft, William Blake, and many others.
