Maybe it is just good sense; after all, cannibalism was the method by which kuru, a degenerative brain disease similar to Kreutzfeld-Jakob disease, was spread throughout the members of the tribes of New Guinea. After cannibalism was outlawed, kuru stopped showing up in the population. Perhaps the stigma of "sin" in this case is just good sense for the continuation of the species without the propagation of contaminants directly within the population. Sort of like it is a sin to marry your sister, but it is also good sense not to do so if you want children who are healthy...
P.S. Can you imagine how prion diseases like mad cow would run rampant in a Soylent Green scenario? Scary...

Because it comes under the commandment, thou shalt not kill.
That said, under certain circumstances it is allowed and not been condemned by the main stream churches. If the others around you are dead and you are starving to death then it is permitted. The case of the Chilean soccer team that crashed in the Andes; Pilot Harte in Northern Canada or people in lifeboats at sea have always been exceptions to the rule.
Now On a Lighter Note:

Clearly you value human existence, but you have not carried that concern far enough. The idea of consuming other human beings for food forgets that they are also our brothers and sisters.
In a world that is suffering from human over-population, it's better to ask why the Catholic Church considers birth control a sin.

I don't know either. I saw something about this Peruvian soccer team whose plane crashed in the Andes, and had to resort the cannibalism to survive. I think that they did the right thing in order to save their lives. If they didn't do that, wouldn't that have been suicide anyways?

Look. Eating other members of your species is gross. And it's the job of members of a species to create more of that species, so the species grows. Cannibalism is totally contradictory to the laws of nature ingrained in every human's brain. Besides, it's against every national and religious law I can think of. So please don't eat me.

it quite is unlawful at the start. And as for being a sin, i think of in case you may desire to consume the ineffective to stay, like those adult adult males in the snowy mountains years in the past, that's ok by using God. yet to kill a guy merely to consume him is a sin.
