Your fiance's uncle will have a zillion ideas for you. I always advise my couples to sit down with paper and pen, and draw out where they want people to be. That includes the parents, grandparents, extra seating for a little person who may get tired of standing up, ie ring bearer or flower girl. If you don't have a wedding planner and the officiant is not available then it will be your job to get the wedding party together and run the rehearsal. If you'd rather not do thing yourself, you could always try to find a wedding planner who charges hourly for things like that. You'd have to met with the person ASAP to give the information on your wedding party, etc, but it would be well worth it - especially if you've not done it before. It will take less time for a professional to do it.

Are you sure that the uncle isn't an option? If is going to be the officiant, then certainly he will need to be at the rehearsal. And if he's married people before then he should be helpful in telling people how things are going to happen. Depending on your space, it's up to you to decide things like where people need to stand, how attendants will walk in, and what needs to happen. There are different ways that can happen and much of it is your personal choice.

If you are getting married in a church some churches provide a coordinator for the rehearsal, but not all. Call and check.
If you are really not sure how to coordinate everything, you can hire a wedding consultant to help you with the rehearsal and ceremony only. They are experienced in many types of ceremonies so it may be worth it.

I picked where I wanted people to stand. Then the pastor who married us was in charge of making the rehearsal run smoothly. We had met with him a week before and decided on the order of everything (vows, rings, unity candle, song, processional).

You could do it according to your vision. My cousin didn't have one either. She and the people there just bounced ideas off each other and then went through the ceremony.
