Go by the smell.
The are pineapples that have a greenish skin even when ripe, and there are some that have to be nearly orange before they are sweet, but with all of them if you have a really strong and pleasant "pineapple" smell then they are ripe. This will also help you avoid over-ripe ones that start to smell fermented.

In addition to itchybubbles' answer, we always were taught to pull a leaf. If it gives easily, the pineapple is ripe.

If you find it in the grocery store It may have been there a week or more IT is ripe
Even if you are lucky to see it come out of the shipping box
more likely IT is ripe.

Pineapples cease to ripen when they are harvested: a green one will not ripen over time at home. The surest sign of ripeness is its color. Choose one that is mostly yellow, but has no squishy spots.

Depends to the types/species of pineapple.

Type 1)
When it's ripe, the skin/body color will turn orangy & red.
A sweet smell will be obvious & the more ripe it gets, the softer it's body will feel when you press it with your thumb.
- this type has sweeter taste & softer texture & good for desserts.

Type 2)
It's body color won't change must. It's skin type more thick.
But the head (crown) & bottom will dried out & drop it's leaves easily.
- this type has crunchier texture but more sour & mild thn. sweet., good for salad

You can smell the pineapple.
It gives a little when you poke it.
It turns a nice yellowy/golden colour

Pull off the leaves, if they come off easy it is ripe.
Smell.

cut it in half and look at the yellow area to see if it has any darkish, green spots on it
