Asalam alaikum sister, may Allah make your project easy and sucessful for you. I would personally recommend Al Ikhlas. Its short to the point, and said to be 1/2 the Quran. Or the Fatiha. Its very easily understood by anyone, and again is short and to the point and 1/2 the Quran.....best to you, salaams....

this is my favorite verse
but my translate of is verse is not good enough for me
" oh believers, we (in Arabic "we" instead of" I "for royalty) created you males and females and make you nations and tribe to get to know each other"
I cant translate the rest of verse i don't know the meaning in english.

Well, I don't think that the Quran is good to quote from, look at all the violence in the world that comes from it.
Here is a Word from the Most High God that would be good;
Psalm 37:4
Delight yourself in the LORD
