Here are some of my favorite recipes.

Chicken and Mushroom Bake with Rice
6 chicken pieces
1 c. water
1 can cream of mushroom or
cream of celery soup (i prefer cream of mushroom)
1/2 c. rice
2 medium carrots, sliced (I sometimes omit)
celery salt, for seasoning
paprika, for seasoning
1/4 tsp. salt, as needed
Place rice in bottom of a baking dish. Pour 1/2 c. water over rice. Add 1/2 can mushroom soup. Stir to mix with rice. Place chicken pieces, salted and peppered, on top of rice mix. Sprinkle with celery salt. Add carrots. Add remaining 1/2 c. water to mushroom soup in can. Stir until well blended. Pour over chicken, carrots and rice. Sprinkle paprika on top, sometimes I add a little parsley (nice pretty effect). Cover tightly with foil. Bake at 325' for 1 hour or until chicken juices run clear.
You can also cook this without the rice and carrots.
It makes a nice gravy to pour over cooked rice or noodles.

Oh Yeah, Fried Chicken is great, but a good barbeque, you can't go wrong. Wether it's a honey barbeque sauce, Red Hot, Garlic and Herb, or just plain old Open Pit.

Another very simple Filipino recipe would be chicken adobo. I like it grilled, or traditionally made in a wok on the stove.

1 (2 to 3 pound) whole chicken, cut into pieces
1/4 cup apple cider vinegar
1/4 cup soy sauce
ground black pepper to taste
2 tablespoons olive oil
1 clove garlic, crushed
2 bay leaves

NO BAKE Quick & Easy - Cheesy Chicken Casserole
About 30 min. total (from beginning to end)

Ingredients:

3-6 Boneless skinless chicken breast (per your desire)
1 can Cream of Chicken
1 can Cream of Mushroom
½ log of Velveeta Cheese
1 bag noodles (assorted colored spiral shaped)

Brown your chicken in a skillet, using salt, pepper, garlic powder, & lemon pepper. When the chicken is ALMOST finished, prepare the water for your noodles (bring it to a boil & then toss in the noodles). Dice the chicken into chewable chunks (do the same w/ the Velveeta cheese, but make them smaller so that they melt faster). After you get all the dicing done, heat the cream of chicken & cream of mushroom in the microwave or in a pot. Once your COM & COC is heated up, toss in your cubes Velveeta & chicken chunks all into the same bowl - stir until cheese melts. By this time, your noodles should be done. Drain & toss them in to the pot as well - Mix thoroughly. Throw in an additional handful of Velveeta for extra cheesy-ness (if you'd like).
