Let's keep it simple. 4 servings
1 lb. of back fin blue crab meat or Dungeness lump crab meat
16 steamed jumbo shrimp--peeled and deveined
2 ribs of celery--chopped small
4 hard cooked eggs--quartered
2 heads of broken Romaine hearts
1/2 cup black olive slices
Several rounds of thinly sliced sweet Bermuda onion
One tomato per salad, quartered
Freshly made Caesar dressing
Warm Crusty French Baguettes
Mound the romaine on four cold salad plates. Distribute crabmeat and celery evenly over all four plates. Add shrimp, then garnish with eggs, olives, tomatoes and onions. Serve dressing on the side for each salad. Bread and room temp garlic butter.

Anything green with grape tomatoes, dried cranberrys, sharp sharp chedder cheese, sliced (thin!) apples and sweet onion. I like to spray the onions with rice vineger that has a little raspberry preserve stirred into it for a light dressing
