Salt will bring the juices out of the watermelon thu making it sweeter tasting. There is nothing like it.
You will find mostly Southerners doing this.

If you leave salt out of a cookie dough recipe, the cookies taste bland and less sweet. The same process goes on with watermelon.
Below: "A new study shows that salt suppresses bitter tastes, bringing sweet and sour flavors to the fore."

Maybe out of osmosis, the flavor is concentrated and not watered down on the tongue, by keeping the watermelon juice a bit hypotonic as a solution.

it is totally logical. a great form of style is merely assessment and assessment. Sugar and salt a great deal assessment one yet another. it is likewise why candy and bitter dishes are so universal. it is undemanding to "positioned on out" your senses. Ever scent a rose too many cases in a row? fairly quickly it smells like no longer something. comparable element occurs with style. Cooking and nutrients are ALLLLLLLL approximately balances between contrasting flavors.

It brings more of the juices out, also to balance out the sugar, a little salt makes the sweetness more noticable

my dad used to eat his watermelon this way when i was a child. he said that it [salt] brings up the flavor. i tried it & strangely enough, just a dash really does.
i still prefer it without salt, though...
