any ideas on what to make for dinner for 6 nights for about $35 ...I am kinda short on cash this week..Oh its for a family of 3

I have a job and so does my husband we just had a ton of things to pay this week plus back to school shopping so the money went pretty fast.

Pastas, grains, tofu, dried beans, fresh vegetables in season, winter squash, potatoes... the choices for cheap, healthy and flavorful main ingredients is almost endless. Combine them with inexpensive flavor bases and small amounts of specialty ingredients, and you'll never get bored.

Occasionally serve breakfast for dinner. Even when prepared in a big way, breakfast is one of the most economical meals to make. In many busy homes, families rarely have time for a big breakfast of pancakes, eggs, and bacon in the morning, so it's a special treat to have a meal like that for dinner now and then. Omelettes also make a good dinner choice.

Do as we do. My fiance and I buy a large roast, cook it in the crock pot in water. We throw in some potatoes and carrots. What meat we have left, we save w/ the broth, add some more seasoning and beef soup base mix and throw in some barely. The leftover roast becomes soup the next day.

You could do the same w/ a whole chicken. Or turkey for that matter. Buy a large one and roast it. What you have left can be turned into a hearty soup. Just serve w/ bread.

Beans are also good. A nice hearty Navy Bean Soup is always good. You can omit the ham.

Rice is also good. Sometimes we'll cook hamburger and had spices, add frozen peas & carrots and mix w/ the rice. It is very good.

Or cook the hamburger and turn the juices from the fully cooked hamurger into gravy. Serve over rice or potatoes.

Vegetables such as potatoes, onions, carrots, corn and green beans are cheap, and people don't have to have large quantities of meat every meal.

You can make a chicken last for 2 meals. Roast it for the first night, and use the leftovers in a casserole like chicken and dumplings, or chicken rice casserole, or chicken pot pie then other night.

Ground beef is inexpensive. Get a couple pounds of that and make meatballs and spaghetti one night, and a ground beef casserole another night.

One night you could have a "breakfast". Hash browns, eggs, and pancakes.

The remaning night you could have macaroni and cheese and a salad or vegetable.

And, don't forget hot dogs. Have those one of the nights with baked beans.

It shows the price of the meal in total and the price per serving. These budget-friendly meals will serve 4 people.

you could buy a beef roast and have it with potatoes and veggies one day and have the left overs made into stew or soup.

cook a chicken with veggies and save the left overs for fajitas or chicken sandwiches

have breakfast for dinner

tossed salads are fairly cheap add some left over chicken and some mandarin oranges

Buy a a 5 lb chub of hamburger

make 4- 5 meals using a little 1lb each meal

goulash
hamburger gravy and potatoes
hamburger patties- burgers, or plain with a salad
spaghetti and meat sauce
for 5 meals
macaroni and cheese with hamburger in it.

Have breakfast for dinner one night
buy eggs
and make omelette's

with the eggs and tortilla. make breakfast tacos frying up a couple of potatoes in the scrambled eggs.

if chicken is on sale.. buy a chicken and split it.. use half for chicken and dumplings.. half for soft chicken tacos

The lettuce will give you enough for a salad and enough for tacos and hamburgers.

spagetti ($6), hamburgers w/ potato salad ($7), sausage w/ mac n cheese ($5), grilled cheese and soup ($5), chicken w/ flavored rice ($5), and one night out at the dollar menu at mcdonalds for 3 people ($7-8).

Thats six meals. They may not be top notch meals but they are something thats not too plain. Hope it helps!

Eggs are cheap...try having 'breakfast for dinner', or a quiche, or a frittata. Pasta is another cheap way to eat. You can make a mess of spaghetti for el-cheapo.

See what you can make from scratch out of your pantry, too. Ready-made items are always more expensive.

Shepherds Pie.
500g (1lb) Minced Lamb.(beef will do)
1 Large onion.
2 Beef cubes.
1 ½ C Water.
½ C Frozen peas.
½ C Diced carrot.
2T Cornflour.
4C Potato. (mashed)
½ C Grated cheese.
Season to taste.
Chop onion and brown lightly, add mince and brown. Crumble in the stock cubes, add 1C of water, carrots and peas.
Simmer for 10 minutes
Thicken with cornflour mixed with ½ cup water and cook for a couple of minutes.
Spread out in a pie or baking dish and cover with mashed potatoes. Sprinkle with cheese and bake at 190C (375F) for 20 minutes until the potato has browned and the cheese has melted.
If made with beef it would be called Cottage Pie.
Salmon Croquettes.
3 Large peeled potatoes, chopped.
1 Small onion finely chopped.
2 210 g of Pink salmon, drained and flaked.
1 T Chopped fresh parsley.
2 t Grated Lemon Zest.
¼ C lemon juice.
1 T Vinegar.
1 Egg, lightly beaten.
¼ C Plain Flour.
S&P.
2 Eggs lightly beaten.
11/2 C Fresh Bread Crumbs.
Oil
(I)
Cook potatoes in boiling water until just tender.
Drain and mash.
Place in a mixing bowl. Add onion, salmon, parsley, lemon zest and juice, vinegar, one whisked egg and
pepper.
Stir to combine.
(II)
Divide mixture into 16 portions and form into patties or sausage shape.
(III)
Combine flour and pepper and roll the patties or croquettes to cover. Shake off excess flour and dip in the two beaten eggs, then into the crumbs to coat evenly. Store in the refrigerator for 3 hours.
(IV)
Heat oil in a deep fry pan and lower a few at a time into medium hot oil for about 5 minutes turning over.
Remove and drain on paper towels and keep warm.

At the end of step three they can be refrigerated for up to a couple of days.
Meat Loaf.
300g Lean minced beef.
1 Large onion, sliced.
1 Large potato, grated.
1 Medium carrot, grated.
310g can Three bean mix, drained and mashed.
1 Egg, lightly beaten.
Ground black pepper.
2T Soy sauce.
1 Clove Garlic, crushed
1t Paprika.
150g Tomato paste or puree.
1t Mixed herbs.
¼ C Tasty cheese grated.
(I) Mix all ingredients together (except cheese)
(II) Press into a loaf tin and sprinkle with cheese.
(III) Bake at 180C for 1 hour.
Frittata. Ham.
6 eggs beaten.
1 teaspoon oil.
½ cup grated cheese
200g ham.
Tomato.
Salt and freshly ground Black Pepper.
1 table spoon of Fresh chopped parsley.

Heat the fry pan and add oil on a low heat and add cheese, ham, tomato, salt and pepper to beaten eggs and stir in.
Pre heat the grill.
Pour in the egg mixture and cook for 5 minutes. Do not stir.
To finish cooking put under the preheated grill until the top is brown.
Serve sprinkled with the parsley.

Eat steak the first night then starve the next five nights. But really, get some pasta or something.
