I marinated in wine, lemon, worcestshire, salt and sugar. will the ingrediants prevent bacteria from growing? also, if i bring the meat to a safe temperature while cooking, is it still safe to eat. or should i trash it.

NO, don't eat it! It could give you food poisoning.

This is from a safe food handling website:

"Perishable food must be kept cold or frozen at the store and at home. In between, the food should be at room temperature or in the car as little time as possible. Then it must be kept cold or cooked and chilled. Food should not be out of the refrigerator or oven longer than 2 hours."


The good thing is, now that you've done this once, you proabably won't forget again. Maybe go out to eat instead?

If it was left out overnight, definitely do not use it. It isn't whether or not the marinade with prevent bacteria, it is because the meat was left out for a prolonged period of time at room temperature.

Trash it. The few dollars it cost isn't worth the risk of salmonella, botulism, time off work, hospital bills, doctor visits, etc.

If you can't pitch it now because you don't want to smell it in the trash for a few days, put it in a ziploc bag with a note that says, "SPOILED" in big letters, and freeze it, and toss it on trash day.

Wine, Lemon Juice and Salt are all very good preservatives. If the meat still looks good and smells good I would cook it normally (not necessarily well done) and eat it myself.

Sorry if you left it out I would throw that baby out. If you had left it in the fridge it would be a different thing. Don't eat it salmonella is a bad thing to get.

NO OF COURSE YOU DONT' EAT IT! It is not safe in the least; throw it away!

Trash it. Never eat meats that have been left out.

The wine would kill some bacteria, but you can't be sure. How warm was the room etc. would also factor in.

While I hate to waste a good steak, it is no longer a good one. The marinade is not enough to retard bacterial growth, so toss it.
