Because as atheism grows, and man becomes more technologically advanced (or probably the other way around), mankind seems to want to believe each other rather than have faith in what they can't see.
Although mankind as repeatedly been wrong, people still trust each other over God. It's illogical, but a lot of things we as humans do are illogical. I guess this is just another example.
The war has always been between God and man's technology. We like to think we can figure everything out and do it all on our own. We have a hard time accepting that we have to submit to a higher authority....but then we submit to government.
Like I said, it's illogical. Believe me i've tried to see it from their point of view but it never makes sense. Mankind is not all that great. We don't have all the answers.....but God does.

Because the math and therories of subatomic particles make more sense to some than the concept of something they can't mathmatically prove or therorize without accepting the words of an ancient book full of emotion, group brainwashing and judgements against people who do don't believe as they do.

I think the problem here lies in your wording of the question; specifically, your use of the word "rather". I'd rather believe that there's a God, and that there really is some greater power up there guiding us for some purpose.
However, I can't force myself to believe something, even though I'd rather it be true.
I'd rather believe that people aren't getting robbed and murdered in this world, but evidence points to the contrary. I've been given no reason to believe that there's a God, so how can I simply choose to believe in one? There's been no religion as of yet that has given me a reason to believe it more than any other, but science has given me something more solid, something more tangible, and so I have no choice but to believe it.
Again, the problem here is not that people don't want to believe in God, it's that they just can't do it. You can't force yourself to believe in something, because if you're forcing it, then you're not really believing it.

I stand on neither side of this fence... however I think that it has something to do with the fact that science can trace evolution and can help to prove where we came from as opposed to some all knowing being that we have no proof of existing. Good honest question.

It isn't altogether their fault, satan is a very crafty deceiver that has them so deceived they don't even care if they spend eternity in an incinerator. That's sad. But it's easy to laugh until they are actually experiencing it, with no way out.
In the Bible it clearly states,They strain at a gnat ( by not wanting to endure a little spiritual building hardships now ) but they swallow a camel ( by spending eternity in hell ).

why can people not accept that God may have "created" those subatomic particles that led to our existence?
why can people only believe what is written out in the Bible? A book, that, while inspired by God, (II Timothy 3:16), was actually written by human beings, who brought into their writings, their own ideas, their own knowledge/education, prejudices and customs of the days....many times writing down stories that had been passed down verbally from generation to generation.
Why does your faith only rest in the written word of men...and not in God...who can transcend all religion, all man and all writings.
