Okay... Lately I've been on a Moroccan food kick and I can't get enough of it. It has such a neat flavor because it uses alot of spices, not hot ones but sweet spices like ginger and cinnamon. Here is one of my favorites and you can find more on recipezaar.com, that's where I find other Moroccan recipes. Also, I like to use boneless skinless thighs instead of breasts but its all in prefrence (: I serve mine over rice or couscous.
Morrocan Chicken
1 lb chicken breasts, cubed
2 teaspoons salt
1 onion, chopped
4 garlic cloves, chopped
2 carrots, sliced
2 stalks celery, sliced
1/4 cup raisins (optional)
1 tablespoon minced fresh gingerroot
3/4 teaspoon paprika
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground turmeric
1/2 teaspoon cinnamon
1 1/2 teaspoons curry powder
salt and pepper
1 1/2 cups chicken broth
1 cup crushed tomatoes
1 cup canned chick-peas, drained
1 zucchini, sliced
1 tablespoon lemon juice
Season chicken with salt and brown in a large saucepan over medium heat until almost cooked through; remove chicken from pan and set aside.
Saute onion, garlic, carrots and celery in same pan; when tender, stir in ginger, paprika, cumin, oregano, cayenne pepper, cinnamon, curry powder and turmeric; stir fry for about 1 minute, then mix in broth and tomatoes; taste for salt and pepper and season to taste.
Return chicken to pan, reduce heat to low and simmer for about 10 minutes.
Add chickpeas, raisins if using and zucchini to pan and bring to simmering once again; cover pan and cook for about 15 minutes, or until zucchini is cooked through and tender; stir in lemon juice and serve.

I love Mexican food, being from El Paso, Tx. which has the best Mexican food in the world. I make tacos by frying the shells myself, Ground beef, diced potatoes, cumin, oregano, onions, garlic, salt and pepper (add a little, taste, add a little more). One of my favorites is salpicon. I use left over boiled or smoked (the best!) beef brisket, add Italian dressing to taste, salt, pepper, and a handful of chopped cilantro. You can add garbanzo beans, too, but I don't. Serve with sliced avocados and heated corn tortillas.

I love Ukrainian food - perogies with potatoes and cheese inside, served with sauteed onions and sour cream, or mushroom sauce. Cabbage rolls, small ones without meat. Borscht. All yummy food.

my favorite is feuille de manioc from central africa (i am in gabon).
you pound up cassava leaves (manioc) and boil them for like 40 minutes, until all the water is out. then you add dried smoked fish meat, maggi cube. in a skillet, sautee oil, garlic, onions, and peanut butter (make it yourself by pounding peanuts). add this the the leaves and enjoy!!!
we eat it with rice, cassava roots boiled (tubercule) or with baton de manioc (i can't describe to you how to make that... its a long process)....
YUMMMMM now i'm hungry!!!
also, best if cooked over a fire pit outside, but any stove will do
if you don't like fish, you could put chicken or whatever. or nothing. i like it with fish.

Any Mexican food-soft tacos are easiest for making at home.
Lasagna is the best thing ever, though!
