or casserole, I have brought some diced lamb and was hoping someone could tell me how to make a lamb stew/casserole, because I haven't got a clue, I am going to make it in a slow cooker, any recipe gladly appreciated x

Lamb Casserole Recipe

Lamb casserole recipe is made with lean cubed lamb, bell pepper, celery, potatoes, peas, and rosemary, along with
other seasonings.

INGREDIENTS:
1 1/2 pounds lean lamb, cubed
1/4 cup flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/4 cup butter
1/2 cup chopped onion
1/2 green bell pepper, chopped
1/2 cup chopped celery
1 tablespoon chopped parsley
1 teaspoon ground sweet paprika
pinch rosemary
3/4 cup hot water
1 1/2 cups frozen peas, thawed
1 pound cooked potatoes, cut in 1-inch pieces

PREPARATION:
Combine flour, salt, and pepper; dredge lamb pieces in mixture. Heat butter in a large heavy skillet; brown lamb cubes on all sides the transfer to a 2-quart casserole. To the skillet add onion, bell pepper, and chopped celery; cook for 5 minutes. Stir in parsley. Add mixture to lamb in casserole. Sprinkle lamb mixture with paprika and rosemary. Add hot water. Cover and bake at 350° for 1 1/2 hours. Add peas and potatoes. Continue to bake, uncovered, for 30 to 45 minutes longer, until lamb is tender.

Serves 6.

Here's my version:

Dust the meat lightly in seasoned flour and brown (the flour will help thicken the stew slightly during cooking). Put the meat in the slow cooker. Deglaze the hot pan with 1 cup beef stock and get up the yummy drippings. Add to the pot.

Chop and add:
1 onion
4 cloves garlic
2 carrots
3 parsnips
2 potatoes
1 stalk celery

Add one bottle brown ale (serious YUM) and beef stock to desired level. Add 1 bay leaf, a little thyme and rosemary. Let slow cook at least 4 hours. 1 hour before done you can optionally add some mushrooms.

I make this at St. Patrick's day and its awesome.

NAVARIN OF LAMB

1.25kg diced lamb
60g butter
2 tablespoons oil
flour
1 clove garlic
3 beef stock cubes
2 1/2 cups water
1/2 cup tomato puree
4 small turnips
12 small white onions
125g bacon
30g butter
12 small potatoes
125g peas
2 tablespoons chopped parsley

Toss meat in flour.
Melt butter and oil in large pan, add meat and brow well, remove from pan.
Add crushed garlic, saute 1 minute.
Add 1 tablespoon flour to pan, cook 1 minute.
Add water, crumbled stock cubes and tomato puree, stir until smooth and sauce boils, reduce heat, add meat, simmer covered for 30 minutes.
In separate pan, saute peeled onions and chopped bacon in extra melted butter 1 minute.
Add to pan with peeled and sliced turnips, peeled potatoes and shelled peas.
Bring back to boil, reduce heat, simmer covered further 30 to 35 minutes or until meat and vegetables are tender.
Add parsley.
Serves 4

Brown the meat first, then bung it in the slow cooker with lamb stock, chopped carrots, onion and any other veg you like and just cook for as long as you can so the meat is lovely and tender.
