Serve this with a vegetable - its very good and easy.
Broccoli, Chicken and Cheese Casserole
2 packages frozen broccoli
2 - 3 cups cooked chicken - cut up
2 eggs
1/2 cup shredded cheese
1 can cream of mushroom soup
1/2 cup mayo
1 small onion, chopped into small pieces
1/2 stick butter
1 sleeve Ritz crackers, crumbled
Cook broccoli according to package directions, drain. Add all ingredients together, except the Ritz crackers and butter. Mix well, pour into a baking dish.
Melt the butter, add the cracker crumbs, and mix well. Add to the top of the casserole.
Bake 15 - 20 minutes in a 400° F oven until hot and bubbly.
Serves 4.

a very simple recipe: buy a nice chicken
put plain garlic inside the chiken (plenty of)
and without peeling it, put at least 10 pieces around the chiken. A bit of olive oil and go!
put in the hot oven for almost 2 hours
it is terrific and you brother will be able to eat it, really!
cook it for 1/3 of time on one side, 1/3 the other side, and thae last 1/3 of time as usual! it wont be dry.

The trick is to find a good resource for simple tasty foods (try allrecipes.com or recipezarr.com) that you can search by main ingredient. i found this one and since you mention a 3yr old it should go over well:
Quick Polynesian Chicken
INGREDIENTS
6 chicken thighs
1 (15.25 ounce) can fruit cocktail
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Rinse and pat dry the chicken pieces. If you wish, remove the skins (not mandatory). Place chicken in a 9x13 inch baking dish.
Pour the fruit cocktail and juices evenly over the chicken and bake in the preheated oven for 1 hour (no turning or basting needed). Let cool and serve over Uncle Ben's ready rice (any easy white rice will do).

get some chicken breasts cut into bite sizes fry up until done and add taco seasoning and some water let simmer a few minutes put on a soft taco shell top with cheese and lettuce any taco topping for that matter and another taco shell and you got a chicken quesidilla! hope that helps. i know its still on the taco theme but its a little differnt taste anyway!

Myself tonight I'm browning porkchops in a skillet, adding in rice, water, and cream of mushroom soup. Simmer 20 to 30 min.
Last nights dinner you could do too......Take chicken breast or tenders (fresh or dethawed in the microwave).....in a bowl combine bread crumbs/whatever seasoning you like......put the chicken in the bowl and cover both sides with the bread crumb mixture. Pan fry in a pan with olive oil. Very simple and very tasty.
And I know how you feel....most of my cooking turns out to be grilled with steamed vegies, or pasta. My husband....makes varaitions of hamburger helper.

How about some chicken tenders and french fries? Make sure you have some dipping sauce. Ranch dressing is good dip for chicken tenders and fries. Your brother will probably prefer catshup or honey mustard.

I think sloppy joes and jojo fries are always yummy! and sooooo easy. just get the resipe on the back of the sloppy joe envelope if you don't already know how. Oh, and don't forget the coleslaw!
