TOMATO SAUCE FROM FRESH TOMATOES
INGREDIENTS
10 ripe tomatoes
2 tablespoons olive oil
2 tablespoons butter
1 onion, chopped
1 green bell pepper, chopped
2 carrots, chopped
4 cloves garlic, minced
1/4 cup chopped fresh basil
1/4 teaspoon Italian seasoning
1/4 cup Burgundy wine
1 bay leaf
2 stalks celery
2 tablespoons tomato paste
DIRECTIONS
Bring a pot of water to a boil. Have ready a large bowl of iced water. Plunge whole tomatoes in boiling water until skin starts to peel, 1 minute. Remove with slotted spoon and place in ice bath.
Let rest until cool enough to handle, then remove peel and squeeze out seeds. Chop 8 tomatoes and puree in blender or food processor. Chop remaining two tomatoes and set aside.
In a large pot or Dutch oven over medium heat, cook onion, bell pepper, carrot and garlic in oil and butter until onion starts to soften, 5 minutes. Pour in pureed tomatoes. Stir in chopped tomato, basil, Italian seasoning and wine. Place bay leaf and whole celery stalks in pot. Bring to a boil, then reduce heat to low, cover and simmer 2 hours. Stir in tomato paste and simmer an additional 2 hours. Discard bay leaf and celery and serve.

RECIPE!!!!! Serves: 2
2 large tomatoes
Mayonaise (3 tbsp)
Tomato Puree (1 tbsp)
Chopped small peeled Prawns (About 15 each)
Lettuce
Egg (1 each)
Hard boil the egg for 10 minutes and peel.
Meanwhile, cut the top third of the tomatoes off, keep it, you'll need it!!
Scoop out the pulp and dispose of it.
Mix the mayo and the puree together until one colour then add the prawns fill each tomato with the sauce and put the top back on!
Put on top of some lettuce.
Slice the peeled egg and serve alongside
Ingredients for 4
4 large tomatoes
6 tbsp mayo
2 tbsp puree
60 prawns
4 eggs
Use rough measures for the prawns, only an idiot would count each one for exact;ly 15 or 60 or 30 or 45 etc

Make some of this and can the rest:
FRESH TOMATO SALSA
4 to 6 lg. ripe plum tomatoes
1/4 c. chopped fresh Italian parsley
2 tbsp. finely minced garlic
1 tbsp. extra virgin olive oil
1 tbsp. fresh lime juice
Salt & freshly ground black pepper to taste
Cut tomatoes in half lengthwise and remove seeds. Cut into 1/4 inch dice and place in a glass bowl. Stir in remaining ingredients, toss well. Serve within 4 hours for a great fresh taste. Good topping for steak, fish, chicken and veal.

Have you thought about canning them? There are lots of instructions out on the web to do it. Also-it is possible to dry them (dehydrator) but there are lots of recipe sites out there with recipes for tomatoes. Look for recipes for fresh pasta sauces, peeled and sliced you can make tomatoe basil pie, toss in fresh salads, or make tomato cucumber salad....do some research......there are lots of ways to use up your tomatoes

BLT Salad
Ingredients
1 lb bacon
¾ cup mayonnaise
¼ cup milk
1 tsp garlic powder
1/8 tsp ground black pepper
Salt to taste
1 head romaine lettuce - rinsed, dried and shredded
2 large tomatoes, chopped
2 cups seasoned croutons
Directions
Place bacon in a large, deep skillet. Cook over medium high heat, turning frequently, until evenly browned. Drain, crumble and set aside.
In a blender or food processor, combine mayonnaise, milk, garlic powder and black pepper. Blend until smooth. Season the dressing with salt.
Combine lettuce, tomatoes, bacon and croutons in a large salad bowl. Toss with dressing, and serve immediately.

cut the upper part of the tomato take all the inside out.
put on what we have many many salt wash from the salt.
add to this cuted cheese and one cuted claw of garlic mix and fill with these the empty tomato

Sliced them up and serve them with some kosher salt and lemon pepper. Slice them up and put them on sourdough bread with some cheese and brown in a skillet. You can add ham to that too.

slice them up, put some salt, pepper, garlic, crushed red pepper flakes, what ever spices you like. then put cheese on top and pop them in the oven for a couple minutes. they are good by themselves or on top of chicken or a burger.
