If your mom's allergic to eggs, she's allergic to eggs and shouldn't eat them at all.

Well unless she has a special way of not using egg whites when she scrambles them, then yes all in her head. however if she is just using egg yolks to scramble eggs with then god bless her cholesterol level LOL! If she just uses egg yolk she may really have an allergy to egg whites i have never heard of this but hey anything is possible.
