Engineering courses: CAD course, Statics, Mechanics of Materials, Dynamics, Properties of Materials, Thermodynamics, Fluid Mechanics, Intro to Composites, Heat and Mass transfer, Composite Manufacturing, Advanced Microscopy, FEA, etc.

Math: Calc I - IV, Engineering Statistics, etc.

Physics: Physics I - II, Circuits, etc.

Chemistry: Chem I - II, Polymer/Organic Chemistry

There was a course called mechanics of materials when I was in school, but it probably dealt with things like metal and concrete. It may be worth looking into, though.
