For france I would try crossiants and a good robust red,..... seriously, see what smaller fish are about. Generally big fish eat the little ones. Also check the tidal pools, mud flats etc. to see whats on them, any hungry fish that are about are looking to pig out on that, so that seems a good place to start. Having said that though, I have caught fish on cheese, and I can't work out where else the fish are getting the cheese from.

I'm not a fisherman but doesn't it really depend on what you're fishing for? I would think different fish would be attracted to different bait. I would just go to google.com to find out.

It depends where you are fishing (river, lake, sea), what kind of water (brackish, clear), the weather, and what kind of fish you are looking for. Do some research. No one can help you with that vague of a question.
