What on odd question, I would assume if you talk to a working prostitute they can direct you to a "retired" prostititute, there's no law against talking to a streetwalker, just a social stigma.
But why would you need to talk to a prostitute? Looking for a career change?
EDIT: This is the perfect category for this, politics and prostitution are one in the same: They both take your money and in the end they both screw you.

If you live in a large city, the best way is probably to take a walk down to your local court-house in the morning when it is sitting for arraignments, and catch some prostitutes on their way out of court. Certainly they could direct you to some "retirees."
If you are really serious about it, go to the sociology department of your nearest research university, and find a professor, or a community group, who is interested in the same subject. With their sponsorship, you could more easily approach local community organizations, or even local criminal defense attorneys who handle these kinds of cases, leave a pile of cards, and ask them if they would ask people to voluntarily contact you if they wished to talk about the subject.
I'm sure anybody who used to be a prostitute, but is no longer, will be a bit touchy on the subject of their past. It could be difficult to find people willing to talk. Certainly, you would have to find a way to guarantee their confidentiality.

If you're doing some kind of serious research, I would recommend that you go to the red light district of the nearest big city and just start asking around--be honest about your intentions.
Don't go through some social work or rescue organization--they'll set you up with some whacko who turned a couple of tricks and then found Jesus in a big way. It will be a skewed picture of their lives.
