OK I'm not going to advertise my website here like the people above. I've gone to Vegas a lot with my girlfriend and we have had great stays at the Bellagio and Venetian. Both have great rooms and great service. Your wish is their command. However, if you want a quieter experience, check out the Red Rock Hotel and Spa. It's not on the strip, but is a great place to unwind with someone special away from the noise.
