why the polysulfide must keep in water?

why the polymer(polysulfide) produce in experiment must be keep in water???

If this is the experiment where you heat sulfur to a certian temperature and pour it into water to make a gummy material, the water is just to cool the sulfur quickly, other wise it just turns back to regular sulfur when it cools.
