The best tamales are home-mde...my grandma's recipe
is a combination of beef and pork with black olives and
a red chili sauce made from New Mexico chili....
We had a bunch of friends over for a tamale party- bought
a lot of masa at a Mexican bakery, I made up my grandma's
filling recipe and we used that all up, then a friend made a
bunch with sliced green chili, potato cubes and jack cheese-
then we made some sweet tamales, added sugar, cinnamon and raisins to the masa and then steamed them in the ojas.
We had a huge dinner with all the friends, then split up the
leftovers so that each family got a dozen or so to take home.
It was a blast, and the leftovers were incredible.
