It depends, If you're stuffing with polyfill or something of the like, sew almost all the way around the pillow, leaving a gap of 4 or so inches, if you're using a pillow form, sew around as much as you can and still get the form in...which might be leaving the whole side open.
After you turn the pillow right side out, press the seam allowance in (as if you had sewn it) and fill the pillow with whatever you are filling it with.
Thread a needle, tie a knot in the tail and if you can start hand sewing from the inside. Use the line you pressed in as a guide. I'm going to do my best to describe this...
What you're going to do is a "slip stitch". You'll insert the needle into the fold at an angle almost parallel to it and come right back out 1/8" to 1/4" from where you started. On the other side of the fabric, directly across from where your needle came out, repeat. Continue in this fashion until you get to the end. Tie a knot in your thread and cut off the tails...try, if you can, to get the tails into the pillow...you may have to re-thread your needle to do so.

Depends on how you are filling it. If you are stuffing it, sew right sides together, leaving a hole large enough for for your hand. Stuff, then hand sew using a blind stitch. If you don't know what that is, you'll have to look it up online.
If you are using a pillow insert, it's best to create the pillow with a way to get the insert out for washing, like an overlapping flap in the back, or even Velcro.

Sew enough of it around the 3 sides (and a little bit on each edge of the 4th side to still be able to turn it) by machine.
Turn it right side out, and then hand-sew it closed using a slip stitch.

The last seam will not be like the others. You can slipstitch it shut, pinch it and sew it on a machine, put in a zipper, or make an opening instead.
