Yes evolution is a theory but it is a well founded one, much like the theory of universal gravitation or atomic theory or the hydrologic cycle theory. A theory is not a guess, but it is a scientific principle that models one aspect or another of physical reality and is capable of making predictions that are verifyable. In that sense scientific theorys are sounder than almost anything else you can think of, especially spiritual or astrological crap that never works the same way twice.

Macroevolution involves larger changes such as one species mutating into another, which is obviously also an adaptation to environment but may also involve movement from one environment to another.
Saying that evolution is "just a theory" demonstrates that the person doesn't know what they are talking about. Evolution is a SCIENTIFIC THEORY. A scientific theory is not a speculative idea, which is science is called a hypothesis. A scientific theory is a model or concept which must FIT ALL KNOWN FACTS. If is does not fit all known facts it must be discarded or modified. Evolution has fitted all known facts for nearly 150 years.

Microevolution is evolution below the species level. This means the process of evolution is occuring in populations in a species (as alluded to in this question). So change in traits (in your questions, "adaptations") in a species is a matter of microevolution.
Macroevolution on the other hand is evolution above the species level. It refers to "bigger picture" patterns and processes of evolution like the diversification of large groups of organisms (e.g. mammal evolution), the evolution of major innovations (e.g. evolution of flight), and extinction and origination of species and larger groups. This is not one species "mutating" into another species as suggested by another poster.

Note: Cpt. Bunkrum almost got it right with problems with saying evolution is "just a theory," however there are some things that may convey some misconceptions about evolution.
A scientific hypothesis isn't a "speculative idea". It is a statement that can be falsified through a scientific test. A scientific theory does fit all known facts, but more importantly, it is supported by many lines of evidence from multiple kinds of scientific tests. It has never been falsified.
