I've thought of gluing it (someone at an arts & crafts store suggested that would show through unless each piece was glued individually.

Another idea was to have a professional service mount the puzzle between two sheets of plexiglass with plastic bolts in between.

You can cover it with clear adhesive, available from Bits & Pieces. Then you can take it to Michael's or someplce like that and have them do the plexiglas thing.
