Dowsing is an innate talent.
Midwifery takes years of training.
Healing takes years of training.
Animal calling takes years of training.
Potions takes both training and books.
Candle Making takes years of training.
Maker of poultices both training and books
Librarians both training and books
Finder of Ley Lines both training and books.

All of those within the above and more crafts have been called witchcraft by Christianity and many crafters executed for practicing their craft.

Witchcraft can be tough or it come from within naturally. There are many books about witchcraft most not true. Try Scott Cunningham or just look up Wicca.

As usual, Terry is right on target, but I would like to add that many of these things come naturally to a few. Some things we are born with. You cannot learn to be psychic, but everyone IS, they just have to learn how to be open to it. Much can be learned from books but it is all best learned from a knowledgeable teacher.

For some witches it's passed on from one generation to another, and for others it is found in a book, or passed on threw a coven. And for some it's a mix of all of them.
