Lacking a drill press, how would you suggest I drill holes in stained glass, agates, metal or ceramics? I do have a Dremel, Rotozip and drill driver.

if the drill driver is a variable speed, use it, with a carbide bit, or diamond tip bit. or check on a glass drill at the hardware
in metal use a high speed drill bit,
drilling glass or ceramics requires a SLOW speed and lots of lubricant, like water or oil, and a light pressure,

Previous answer "low speed, low pressure and lubrication" is right on. All three are mainly to reduce the heat produced by the drilling. Heat will crack the glass.

I have also seen this done by using a piece of copper tubing and some grinding compound in a drill or drill press. This is tedious but accurate and safe.

Try taping a washer about the size of the hole you need on the item to be drilled. This will keep the drill bit from walking.

To accurately drill into the material's mentioned you do need a steady platform; a drill press or jig that you have made for such a job.

Yes just be sure to use the proper bit, glass bit for glass etc. Your drill driver should handle this.
