The key in Diner Dash is to make chains and to get people to sit in chairs for their colors. It can take a while in upper levels to memorize the patrons that will come in.

Wait a few seconds for 4 people or sets to arrive. Then set them all in the closest colors you can match them with. Then wait for all to put down their menus and collect them, give them to the cook. Then take all their meals at once. (meaning don't pick up the plates of anyone who finishes) and then take up the plates, or serve them appetizers between chains, before you would start to give them their food and pick it up.
