I know program isn't the right word and I know it isn't a bullitian -- that there is a special term. Anyone know?

Actually, bulletin is correct. in it are the announcements of the order of service, which includes the placement of the Eulogy.

It is often referred to as a "viewing" or "wake". The sermon that the priest, or whomever, gives is called the "eulogy"
