Her husband paid money to an elderly German princess to legally adopt him. This was a money-making scheme the princess used to keep herself financially solvent. Once adopted by her, he was entitled to take the family name.
In Germany after World War I, royal titles were no longer recognized as such, and instead merely became part of the persons surname. So, as Zsa-Zsa's husband now could use the surname of the princess, he was now Frederick Prinz Von Anhalt. This does not make him royal, or give him a rank of HRH or HSH. It merely is a last name, like Johnson, Smith or Goldstein. Zsa-Zsa, as his wife could legally share his name, so she technically is Zsa-Zsa Prinz(essen) Von Anhalt.
Not a royal princess in any sense of the word.

Interesting anecdote, after Germany became a republic and titles banned, the elderly Duchess of Coburg (who had been born a Russian Grand Duchess and married a British Prince who became a German Sovereign Duke) received in the mail a voter registration form. The letter was addressed simply to 'Frau Coburg', apparently she dropped dead right then and there. Or at least, that's what the legend says...

Zsa Zsa Gabor is originally from Hungary. Her latest husband paid an old german princess to adopt him, so he could call himself 'prince'. His 'nobility' however, is not valid or recognized by anyone. She is not a princess.

These days Zsa Zsa is ga ga! Her husband was adopted by another man and got the title that way. They deserve one another!

She is not a princess. For that matter, her husband is not a prince - he purchased or was given (depending on who you ask) membership in one of the old German noble families, but since that country eliminated all aristocratic titles in 1918, he has no royal title.

She is not a princess of anything. Her husband might have "borrowed" a title, but that doesn't make him nobility.
