There are several reasons.

Water can and often does influence reactions. This fouls up your experiment. Water can become a reaction product or a catalyst - either way it influences.

Good discipline requires clean equipment - it is just good practice.

Often water can interfere with the measurements of reaction product - making it harder to determine accurately what is produced.

because 1.) if the chemicals you're using react with water, you could have a MAJOR problem.
2.) even if the chemicals don't react with water, introducing water into the equation could give you different results from what you're looking for
