Old favorite and dependable is chicken liver, keep it cold so it doesn't get to mushy. I have always had good luck with this bait.
other baits that work are, old shrimp, Uncle Charlies blood bait (in various flavors), night crawlers, shad
Just about anything that smells bad to you in the food category catfish will eat.

I used to go to the store, get the most grisly piece of beef liver I could find. About a $1 or so worth of meat. I'd cut it into long tailed, triange shaped slices. Then tie a leader to your line with a sinker. Hook the meat on your hook and toss. It goes to the bottom where most catfish feed. Another good trick.......want to chum the water a little? This works!! Get a big coffee can. Mix salt water with some catfood that you left out overnight. Put it in the can, punch some holes in it. Attach a rope to the can. Toss it wherever you want to fish for catfish. It will draw them in big time! Good luck!

I love Catfishing ....The best answer is fish with whats natural to the area that you are fishing...IN Alabama ,Shad is the #1 food source and is hard to beat..But other top baits are live or cut bream,,,Shrimp it gets a fast bite but doesn't stay on well,..cataba worms and good ole wigglers, pink worms and night crawlers.Stink baits and dough baits would be last.

Location, body of water and natural foods makes up what to use. I have used almost every bait known to man from worms, soap to store bought baits but now I use chicken livers that have been given a large dose of garlic salt several hours before use.

I have used plain ole worms and shrimp that come in a box at the local store. They are called TV shrimp or something... they stink though, but just pull them apart and stick part of it on there.
