I've always wondered how they get ham, chicken, turkey, beef, etc. into that large round shape?

Also, how do they keep the meat from falling apart when it is cut?

Sometimes the meat is cut into cylinders & pressed so it doesn't fall apart when cut.

Some deli meats are ground into a thick paste w/ seasonings & binders. Then the paste is extruded into a round, tight casing & kept refrigerated to set. The pressure & the binders make the paste solidify so it can be sliced.

They grind up all the parts of meat that no one wants to eat, cook it, put additives and binders in it and pulverize it to make like a mash.
Then they put it into a machine that packs it into a casing. The binders hold it together.
It is made the same way they make hot dogs or sausage.

maybe from the machine they use to cut the meat from behind the counter.
