Here's a rhyme to help you...

If not sure you ought-er,
then place it in water...
If it lies on its side,
then it's fresh - eat with pride.

After three or four days,
at an angle it lays.
But, it still is a treat,
so go on and eat.

Ten days: stands on end,
in your baking it will blend.
Cause it's definitely edible,
in your baking... incredible.

But if it floats on the surface,
that egg serves no purpose.
Cause a floater is a stinker!
Out the back door best fling 'er!

(In other words, you can tell by how it positions in the water whether or not it is still good. The flatter it lays on it's side, the better. This is because air will build up in the egg as it ages and begins to go bad, causing it to stand up, and to eventually float in the water. I've had eggs stay good several weeks beyond the "sell by" date. It's "sell by" and not "eat by" for a reason.)

I ve had some 3 weeks after expiration date and they were fine and then some not even expired not good. so crack it open in a single dish and if it s all cloudy I wouldn t use it. I tried the water thing and my expired eggs laid flatter on bottom then the fresher eggs which stood more upward. so who knows.

I don't know the answer to that, but I go by something I was told once. If you take an egg, and give it a gentle shake, such as if you're rolling dice, you shouldn't hear anything. If it sounds watery, then the egg isn't good anymore.

They're not good even a few days before expiration day. Believe me, - I work at the market, I know what we're doing with food (once our boss told us to erase expiration dates from some chips. They're doing this everywhere!).

I wouldn't eat them if I were you. There's a chance that they're good, but you could probably get sick, so don't eat 'em.
