Yes, there is a difference between using butter & margarine for cakes. The moisture content of butter doesn't vary as much as the moisture content of margarine. Some margarines contain a lot of liquid which results in a denser, heavier cake.
Both are solid fats. Butter is high in saturated fat (cholesterol) while most margarines have hydrogenated oils (i.e. trans fat). Some people think butter is better since it is known/understood how the body processes this type of fat. Whereas, it is not clear how the body deals w/ hyrdrogenated fats (trans fat) but research shows that it does damage the coronary system.

Some folks will claim they can taste the difference, but I bake cakes alternating with what ever is on sale at the grocers, margarine or butter. I serve forty people at a time when I bake my cakes ( we sell it to the patrons who come to play Bingo at my American Legion Post) and not one of them can tell when I've used butter and when I've used margarine. And if I don't show up with those cakes, they complain long and loud!

It's okay if you use margarine in the stick form, and not in the tub. However butter provides much more flavor than margarine. Margarine is banned from house. I haven't had it in years for taste and health reasons.

Margarine is not a good alternative. It has hydrogenated oil which is the worst kind of fat. Butter is natural and also tastes a lot better.

In my opinion real butter in cakes tastes richer, and better. margarine is better for you, though, if you are on a diet or trying to stay healthy with your eating habits.

Do you want it to taste good then use butter. Margarine is a unnatural substance that was developed to fatten cattle.

Yes, butter tastes much better. It gives better texture, too. And, I just like using food that I can pronounce all of the ingredients :)
