I never ate it with the skin on, I will try it! Also, when frying, how do you not use so much oil?? The eggplant soaks it up, and I go thru almost a whole roll of paper towels just to get all that oil off it.... There's gotta be a better way???!!!

Yes. We do eggplant on skewers on the grill and I make eggplant lasagna and I've never taken the skin off.

It's fine to eat it. It's left on in Eggplant Parmesan and many other eggplant recipes.

As far as I know it is always left on when making fried eggplant.

Batter the Egg Plant slices and fry in oil. Use corn meal and egg. This is very good. The skin will cook with the Egg Plant Meat.

Only if you cook the eggplant. But no i wouldn't eat it, that is disgusting.

Yes.
Some Italians leave it on and some don't.
I personally feel that the skin is a little bitter so I remove it.

Yes you can. The skin (like on any fruit/vegetable) has the most nutrients

You can, but not raw. Eggplant is a member of the nightshade family, it's poison. Only cooking negates the poison.
