Basically, beans, rice, salsa and some kind of chopped up meat wrapped in a tortilla and then wrap it in foil so it won't fall apart.
PS. If you are feeling real generous, if you make them hot in the morning and then wrap them in foil, they are usually still warm by lunchtime!

COLD CUT APPETIZERS
2 slices ham, cut lengthwise into 3 strips
2 bologna slices, cut in 3 strips
3 pepperoni strips, cut in half lengthwise
2 slice American cheese, cut into 4 strips
Start with ham. Make a tight roll. Roll the bologna strip around the ham, and so on. Save the pepperoni for last. Pierce with a toothpick to hold the roll together. Serve to the kids as an appetizer instead of lunch. Or, in lieu of a sandwich in the school lunch for those kids who don't like sandwiches because of the bread. Just drop them in a baggie. They can be made with any combination of cold cuts.
There are plenty of other ideas at the link below, but this appealed to me as it could wrap around other fillings, and wrap in lettuce cups, Iceberg.
You may also get an idea of my thinking with these rolls

If possible get a loaf of Caterers Sliced Bread. It is sliced length ways.
Spread with butter or margarine then lay your fillings across the bread. Removing the crusts will make them easier to roll. Cut roll in 3 or 4 pieces.

how about cold fried chicken/ potato salad/macaroni salad/ sliced assorted meats and cheeses and sliced fresh cucumbers tomatoes with fresh fruit and when it gets cold; stews and chill in a Thermos with biscuits I know you said he is tired of sandwiches but have you tried wraps(different types) and pita pockets..I'm not sure if you would be able to but you could always show up with a nice lunch for you two to share and spend lunch together...I hope I gave you some ideas...Good Luck...P.S. Don't forget the drinks for him like>>>Ice Tea>>Flavored Water>>Plain Water with lemon slices..Gatorade>>>Soda usually isn't good to send because it doesn't replenish the body's fluids...

Make some wraps for him.
Get Large soft tortilla's at the supermarket.
Roll leftovers with lettuce and tomato and salad dressing.
Roll Lunchmeats with same.
Roll Tunafish with same
Just don't add too much dressing they get soggy.
There you have wraps.
Wraps come in flavos like sundried tomato or basil...

Chips and some salsa in a sealed cup. Veggies and the individual packaged ranch dressing. Pepperoni rolls.

well maybe just spice up the sandwiches make them different...exp. rolls/crossants/pitas, different meets/cheeses like deli sandwiches!! or....some ideas would be cold pasta salads, tuna salad with lots of stuff added (try cucumber, tomato, apples) add dips and chips, good sides to go with anything

Thank you for asking this question, my husband is a carpenter also and I too have this dilema. It is way too hot to have anything milk based and they have no microwaves or anything like that to heat anything so I feel your pain.....

if he has another thermos, then you can send all sorts of foor, like soups, stews, and such. chef salads would be a good choice, just remember to pack the dressing in a seperate container

*You can marinate over night, wedges of tomatoes and half slices of cucumbers in Italian dressing. Serve that with potato salad and left over chicken breast or leg.
*Pasta salad with tuna and frozen green peas.
*Big Chef salad with lettuce, ham, boiled egg, cheese, tomatoes, cucumbers, radishes, etc...
