Thanks...I am pregnant, and none of this stuff sounds good to me, but I have to use it up in a meal. Any suggestions would be great. I cook a LOT, so I have almost every spice/seasoning to add, but these are the main things:
About 1# of roasted leftover chicken.
1# fresh baby spinach
1# fresh strawberries
4oz mascarpone cheese
I gotta use this stuff up and can't think for myself today!
Also, I am not big on salads, so if you have any cooked recommendations that would be better, but I am open to your suggestions.

Pizza
Spinach Alfredo base:
1-1/2 cups light cream
3/4 cup Parmesan cheese, grated
1 tsp Salt
1/2 tsp Pepper
1/2 tsp Garlic Powder
3 cloves of Garlic, minced
1 tsp Oregano
2-3 oz Fresh Leaf Spinach, chopped
The cream is heated to boiling then turned down to a simmer while the other ingredients are mixed in. Remove the mixture from the heat when it begins to thicken.
Lightly coat 2 boneless chicken breasts, cut into slivers, with flour and fry it lightly in Olive Oil and about 2 cloves of minced garlic.
Spread a thin layer of Alfredo spinach sauce onto the base and top with thinly sliced tomatoes, garlic chicken and mozzarella cheese. Bake for 15 minutes at 475 degrees.
Mix the cheese with sugar to dip the berries for dessert.

Fry up the chicken in a little olive oil and lemon juice. Season to your liking, maybe a little bacon bits.
Then steam the spinach just slightly, don't over cook it.
Melt the cheese with some cream cheese until slightly thickened.
Put the spinach on the plate drained from all water, add the chicken on top, then pore a little of the cheese mixture over it and top with strawberries, or save the strawberries for a side dish.

Add powered sugar and lemon juice to the mascarpone cheese, whip it until smooth. Use it to dip the strawberries in.
Chop the chicken and spinach, add diced onion and garlic. Add about a quarter cup of bread crumbs, 1 egg, some Parmesan cheese and some softened butter. Roll into balls the size of golf balls, bake in a 400 degree oven for about 15 minutes. You have a yummy spinach ball appetizer.

You could make a salad with all of that, then make a balsamic vinaigrette to go with it.
I personally love strawberries in salads, dessert or not.
It might not work for you though, perhaps the thought might turn your stomach. If it does, I'm really sorry! :(
Basic Balsamic Vinaigrette:
1/4 cup balsamic vinegar
3/4 cup olive oil
2 tsp sugar
Dissolve the sugar in the vinegar, then slowly whisk in the oil. You can add herbs or garlic to this if you want and omit the sugar, but I like mine as it.

Slice the chicken and put it in a sandwich with the spinach. Add some cheese if you have any. Then eat it cold or grill it like a panini.
Mix some chocolate syrup into the marscapone and dip the strawberries in it.

cut the strawberries in half top with this mixture:4 oz mascarpone, 1tsp vanilla, 1/8 tsp cinnamon, nutmeg, 2tbs sugar,
cook some pasta, add shredded chicken, spinach, Italian herbs,if you have diced tomatoes, some kind of cheese(Parmesan , etc..) little bit of milk or cream , bake on 400 oven until top is crispy
when I was pregnant my favorite was strawberries, whipping cream and pickles,

Maybe you can use your juicer and make a healthy shake!! (omitting the chicken of course). Eat the chicken on the side.
Or, layer all the ingredients in a pan and bake it (omitting the strawberries of course). Use the strawberries as dessert!

i would probaly make a hot chicken open face sandwich, with a side of spinach sauteed in olive oil and garlic. for dessert i would slice the strawberries and mix them with the marscapone.
