Warm Spinach & Artichoke Hearts Salad
Serving Size : 4
1 TBS olive oil
10 oz of fresh baby spinach
1/4 red onion, diced
1/3 c. sundried tomatoes, chopped
1 (8 oz) jar of artichoke hearts with marinade
2 cloves minced garlic
1 tsp dried basil
1 TBS balsamic vinegar
1 c. crumbled feta cheese
Preheat the oven to 300°. Lightly oil a shallow baking dish. Fill the oiled baking dish with baby spinach. Top with red onion and sun dried tomatoes.
Slice the artichoke hearts into bite size pieces, reserving the marinade. Scatter the artichoke hearts over the spinach. Add the garlic, basil and vinegar to the marinade, blending well. Drizzle the marinade over the spinach.
Top with the crumbled feta. Bake the spinach until it is wilted but not browned, about 10 minutes.

Spinach Stuffed Chicken Breasts
INGREDIENTS
4 skinless, boneless chicken breast halves
salt and pepper to taste
1 (15 ounce) container ricotta cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 clove garlic, minced
2 eggs, beaten
1 (8 ounce) package shredded mozzarella cheese, divided
1 (16 ounce) jar spaghetti sauce
DIRECTIONS
Preheat oven to 350 degrees F. Season chicken breasts with salt and pepper to taste. Slit open on the side for stuffing; set aside. In a medium bowl, combine the ricotta, spinach, garlic, eggs and 3/4 of the cheese. Mix well and stuff each breast with 1/4 of the mixture; secure with toothpicks and place stuffed breasts in a lightly greased 9x13 inch baking dish. Pour sauce over all and sprinkle with remaining cheese. Bake at 350 degrees F for 45 to 60 minutes, or until chicken is cooked through and juices run clear.

Sauteed Spinach in EVO and with Fresh Garlic.
2 (1lb) bags of fresh spinach cleaned and drained.
5 large cloves of fresh garlic smashed
Extra Virgin Olive Oil.
In large dutch oven.
Coat 1/8 inch EVO and bring up the heat.
First add garlic to release flavor and then add Spinach until
finished. Don't over cook. Plate when wilted. Salt N pepper to taste.

ARTICHOKE - SPINACH DIP
1 can drained artichokes
1 pkg. frozen chopped spinach
1/2 c. sour cream
1/2 c. mayonnaise
3 oz. cream cheese
1/3 c. shredded Mozzarella
1/4 c. fresh Parmesan cheese
1/2 to 1 tsp. garlic salt
Cook spinach according to the directions on package and drain. Drain the artichokes and chop them. Mix the artichokes and spinach with the remaining ingredients. Put in greased 1 quart dish and bake at 325 degrees for 20-30 minutes. Serve with tortilla chips. Also good served with sour cream and salsa on the side.

My wife's is simple:
Braze some crushed garlic cloves in olive oil. When ther are just ever so slightly scorched, sautee spinache for about a minute -- just so the leaves begin to wilt. Serve with a sprinkling of feta cheese.

Rinse them well and throw in a fry pan with some crushed garlic, stir then cover.
The wet spinach will provide the moisture to steam the leaves and will only take a few minutes to wilt.

Creamed spinach is lovely. If you type it in a search engine you'll find some good recipes for it.
Spinach Quiche is good and spinach on pizza is also very nice.
If you put it in lasagne, it's also tasty.

Wash and dice the spinach and chuck them into a lamb stew as they do in North Africa. Serve with boiled potatoes. Oh, And chilled wine.

I make a spinach lasagna , it is delicious.
Fry onions and grated tomatoes and 1 clove of garlic.
Grate loads of cheese.
Make a white sauce.
Alternate layers of lasagna with fried mixture, cheese and spinach and white-sauce. End with loads of cheese on top.
