Lettuce certainly. But you never see frozen or canned zucchini nor cucumbers so your question leaves a bit to be desired.

Most of the things people have listed aren't even vegetables... eggplant, tomato, cucumber, and zucchini are fruits. The answer is lettuce, which is not an edible part of a plant that contains the seeds. :)

I'd have to say lettuce because if it's frozen it gets all funky... I learned that when i put my lettuce in my meat drawer in my fridge...

LETTUCE, or a similar green for salads....and I thought of cucumbers, but they come as pickles in jars!
