I have never had a recipe for potato soup...this is how I fix it...
For about 6 servings, I use about four large potatoes, cut in fourths, boil these with one onion and a couple of chopped slices of bacon. Boil this until potatoes are almost done, drain,about half the water off then just quickly give your potatoes a few mashes with a potato masher...just until the potatoes are kinda small (NOT MASHED). Then add about 2 cups of milk or cream along with about 2 T cornstarch (disolved in the milk or cream) stir occasionally until it is hot and thick., salt and pepper to taste, some butter or margerine and enjoy!!!!

Wolfie's Tater 'n Ham Soup
5 or 6 medium potatoes, peeled and cubed
1/2 pound ham, diced
1/4 c. onion
1/4 c. celery, chopped
3 C. milk
To taste: onion and garlic powder, salt, celery salt
2 tbsp. butter or margarine
Boil the potatoes and celery in enough water to cover. When the potatoes are almost done, add the ham and onion, and cook until potatoes are tender.
Add milk -- DO NOT DRAIN. (The potato cooking water adds flavor.) Season lightly with onion and garlic powder, salt, and celery salt.
Heat through, but do not boil. Adjust seasonings, add margarine, and serve with oyster crackers.
For a thicker soup, remove half a cup of the cooked potatoes before adding milk. Mash the potatoes and stir into the soup.

True Potato Soup With Parmesan
Yield: 4
Ingredients:
2 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, chopped
5 potato, peeled, and, cubed
6 cup vegetable stock
1/2 tsp dried basil
1/2 tsp dried thyme
1/2 tsp salt
1/2 tsp black pepper
1/2 cup grated parmesan cheese
1/2 cup fresh chopped parsley
1/2 cup sour cream
Directions:
True Potato Soup With Parmesan
Preparation time is 20 minutes.
In a large soup pot, heat the oil. Add the onion and garlic; sauté for 2 minutes or until the onion is translucent.
Add the potatoes; sauté, stirring to keep potatoes from sticking to the bottom. Add the stock, basil, thyme, salt and pepper; simmer 15 minutes. Using a hand blender, puree the soup.
Stir in the Parmesan and parsley. Place a tablespoon of sour cream on each serving. Serve immediately.

CHEDDAR POTATO SOUP WITH BACON
ingredients
4 bacon slices
1 large onion
1 pound boiling potatoes
1/4 cup all-purpose flour
1 3/4 cups water
1 1/2 cups chicken broth
1/4 cup dry white wine
2 cups grated sharp Cheddar (about 8 ounces)
2 tablespoons chopped fresh chives
preparation
Chop bacon and in a large heavy saucepan cook over moderate heat, stirring occasionally, until crisp. Transfer bacon with a slotted spoon to paper towels to drain, reserving fat in pan.
While bacon is cooking, chop onion. Peel potatoes and cut into 1/2-inch cubes. Cook onion in reserved fat over moderate heat, stirring occasionally, until softened. In a measuring cup stir together flour and water and add to onion with potatoes and broth. Simmer mixture 5 minutes, or until potatoes are just tender. Add wine and simmer 1 minute.

1) use some better to fry chopped Onion
2) put some cutted Potatoes in pieces
3) add 3 cups of water to boiled about 20 mins.
4) put chopped Carrots and mixed frozen vegetables
5) put Cream and mushroom Soup

3 tablespoons all-purpose flour

1 tsp. dill
3 cups milk
1 cup shredded Cheddar cheese
1 cup cubed cooked ham
pepper to taste
PREPARATION:
Directions for chunky potato ham soup.
Bring water and 1/4 teaspoon salt to a boil; add potatoes and cook until tender. Drain; reserve 1 cup of cooking liquid (add water to measure 1 cup if necessary).
Melt butter in a medium saucepan over medium heat. Sauté chopped onion in the hot butter until tender. Add flour to butter and onion mixture; stir until smooth. Season with a little pepper and the dill; continue to cook and stir for 1 minute. Gradually add potatoes, reserved 1 cup of cooking liquid, and milk. Stir well; add cheese and ham. Simmer potato ham soup over low heat, stirring frequently, for about 20 minutes.

PA Dutch...Large cook pot; saute lightly in butter-2 or 3 peeled diced potatoes, 1 lg. diced onion, 2 stalks diced celery, until semi soft, add 2 Tbsp. flour and blend,add about 2 cups chicken broth, salt and pepper to taste, stir well, allow to thicken slightly, now add 2 to 3 cups whole milk. A pinch of dried thyme is optional. Allow to cook on low heat until veges. are soft. Serve with saltines on side.

i'm going from memory bcse i'm not at home with my recipes. lol
1/2 lb bacon cooked and crumbled. save fat for frying onions
1/2 onion, thick diced, cooked in bacon grease
6 baking taters diced and boiled till done
1 can cream of tater or mushroom soup
chicken stock
milk
seasonings....
after the taters are done i drain then add the liquid. mash lightly. season to taste. add bacon before serving. sprinkle cheese on top before serving if you like. cheddar is my fave for this.

boil cubed potatoes in chicken broth until fork tender
add cheese, cream(half and half) until the right thickness - I usually put broccoli and carrots in mine.
