You have to first cut of the tail and the head. Then Take a knife and cut down the stomach area all the way from top to bottom. take the insides out and remove some of the bones.

filet the fish, you can go on line and get a description on how to do it.
some fish have y bones, so you have to make sure you remove it also..

you have to filet the fish and scale it. you can cook w/or w/o the skin depending on the fish.
