These are two of my favorites!

Chicken Parmesan (with Pasta on the Side)

4 tablespoons margarine
4 boneless, skinless chicken breast halves
¾ cup breadcrumbs
½ cup grated Parmesan cheese
1 teaspoon seasoned salt
dash of pepper
1 egg, beaten
1 jar spaghetti sauce

grated mozzarella cheese

cooked pasta (whatever shape you like for a side dish)

Melt margarine in a 9x13 glass baking dish in the oven while it preheats to 400 degrees.

Combine breadcrumbs, Parmesan cheese, seasoned salt, and pepper. Dip chicken in egg, then crumb mixture. Place in baking dish and bake for 20 minutes. Turn meat over and continue baking 20 more minutes.

Heat sauce in a saucepan just to boiling, stirring frequently. Spoon about 3 tablespoons of sauce over each chicken breast and top with mozzarella cheese. (Use remaining sauce to top pasta on the side.) Return chicken to oven and bake until cheese melts and turns golden brown.


Idaho Tacos

3 large baking potatoes
1 tablespoon butter, melted
1 pound ground beef
1 can (16 oz.) diced tomatoes
1 envelope taco seasoning mix
½ cup cheddar cheese
1/3 cup sour cream (optional)

Wash and bake potatoes (or microwave). Heat oven to 475 degrees. Cut each potato lengthwise into halves. Scoop out potatoes, leaving a ¼-inch shell. (Use potatoes as desired.) Brush outsides and insides of shells with margarine. Place shells, cut sides up, on ungreased cookie sheet (or baking stone). Bake uncovered until edges are brown, 15-20 minutes.

Cook and stir ground beef in a 10-inch skillet until brown; drain. Stir in tomatoes and taco seasoning. Heat to boiling; reduce heat. Simmer uncovered, stirring occasionally, 20 minutes. Spoon beef mixture into shells; sprinkle with cheese. Heat just until cheese is melted. Top each with sour cream, if desired. Serves 6.

Here is an easy one and not expensive either! Hamburger Vegetable Soup. Take 1 lb hamburger and cook till brown in a 6qt pot. Drain the grease off and place a package of mixed vegetables into the pot. Add one quart of vegetable juice to this. Season with 1/4 cup soy sauce,1 tsp salt,1 tsp pepper,1 tsp celery seed, 2 Tbs Worcestershire sauce, 2 cans diced tomatoes(undrained),fresh onion ,chopped,about 1/2 cup /or dried,use 2Tbs. Simmer this for about 30-45 minutes or till it thickens. This freezes well and tastes even better after sitting in fridge overnight.

Chili Casserole

INGREDIENTS
1/4 pound macaroni, cooked
1/2 (15 ounce) can chili with beans
1/2 (15 ounce) can sweet corn, drained
1/4 pound ground beef, browned and drained
1 tablespoon hot sauce
1/4 cup chopped onion
1-1/2 teaspoons chili seasoning mix
1/4 cup shredded mozzarella cheese

DIRECTIONS
Preheat oven to 300 degrees F (150 degrees C).
In a large bowl, combine the macaroni, chili, corn, beef, hot sauce, onion, seasoning mix and cheese. Mix well and spread mixture into a 9x13 inch baking dish.
Bake in the preheated oven for 20 minutes, or until heated through.

How about Taco Soup with some warm, soft flour tortillas on the side?

1 lb ground beef
1 small chopped onion
1 pkg taco seasoning
1/2 pkg ranch dressing
1 large can stewed tomatoes
1 can Rotel tomatoes
2 cans Mexicorn with liquid
2 cans pinto or black beans with liquid ( or one of each)

Saute beef and onions, drain off grease

Combine all ingredients and simmer for 45 minutes, allowing ingredients to " marry" . Like most ioups, this is better the next day. Don't omit the dry ranch dressing... it helps create a flavorful balance.

Stir-fry using frozen veggies is quick and easy, I add shrimp, or thinly cut chicken or beef.
Tacos are quick using browned hamburger, taco spice packet, and a can of refried beans all heated up together-add water until you get the right texture. I serve it on crushed tacos for taco salad, or as a taco in a corn shell, it makes a good stuffing for flour tortillas.
Using the above ingredients, rolled into a flour tortilla, you can make enchiladas by layering the tortilla rolls with enchilada sauce and cheese. Serve with sour cream, avocado, salsa-they're all good with these dishes.
Spaghetti in the crock pot is quick and easy. I cook the sauce with added Italian spices, tomatoes, browned beef and onions in our crockpot for several hours. When the kids get home from school I make the spaghetti and we're ready! A salad is a good addition, fruit for dessert, and garlic bread is always a hit.
For fried chicken I rely on a mix of 1 teaspoon salt, 1/4 teaspoon each of pepper and paprika, shook with about a cup of flour. Shake each chicken piece in the flour mixture (I use bread bags, which I save in the freezer for this) and fry in Crisco. For gravy, add remaining flour mix, extra spices and milk to make a country type milk gravy.

There are a few things that I cook pretty often....
1) I brown hamburger meat and make a good gravy to put over it and serve it over rice.... takes less than 15 minutes and it is good.

2) I get pork chops and bread them with a mixture of ritz crackers, parmesean cheese, and italian seasoning and bake them.... thats super good!!!!

3) I get frozen salmon filets and make an aluminum foil pouch and put butter and terriyaki glaze and either put it on the grill or in the oven.

Asian Aura Beef & Broccoli Stir-fry


Ingredients
1/2 cup Asian Aura Dressing™
1 tsp. Fiesta Party Dip Mix™
1 Tbsp. olive oil
1 lb. thinly sliced sirloin steak
1 tsp. Garlic Garlic™
3-4 cups fresh broccoli florets
Prepared hot white rice
2-3 sliced green onions

Directions
Combine first 2 ingredients; set aside. Heat olive oil in large skillet or wok; add sliced steak and Garlic Garlic™. Saute for 2-3 minutes or until no longer pink. Add broccoli to skillet; saute 2-3 minutes or until crisp-tender. Stir in Asian Aura Dressing™; heat through. Serve over hot rice; garnish with green onions. Makes 3-4 servings.


Balsamic & Basil Shrimp Pasta


Ingredients
1 Tbsp. olive oil
8 oz. peeled, deveined medium shrimp
2 Tbsp. Garlic Garlic™
1/4 cup Balsamic & Basil Dipping Oil
16 oz. prepared angel hair pasta

Directions
Heat olive oil in a skillet over medium high heat; add shrimp. Cook about 1 minute on each side until shrimp begin to turn pink. Do not overcook. Add Garlic Garlic™; saute just until softened. Add Balsamic & Basil Dipping Oil; heat through. Remove from heat; toss with hot pasta. Serve immediately. Makes 3-4 servings.

Dried Tomato & Garlic Pesto Chicken


Ingredients
1/4 cup olive oil
4 cubed, boneless, skinless chicken breasts
2 Tbsp. Dried Tomato & Garlic Pesto Mix
1 Tbsp. water
1 tsp. Garlic Garlic™
8 oz. sliced fresh mushrooms
1 small sliced onion
8 oz. shredded cheddar cheese

Directions
Heat oil in saute pan over medium heat; add next 6 ingredients. Saute until chicken is done. Place on large plate; top with cheese. Serve.

cook noodles of your choice. In a skillet add olive oil and chicken bits (your choice on size)...once chicken is close add vegetable of your choice. Sautee them for about 3-5 minutes. Mix with noodles. Add sauce of your choice...I prefer to mix in a can of heated chicken gravy...I know that is weird but it is good! Anyway it is your preference, you can change it up and it is quick!

you can also pick up a copy of the campbells cookbook.
jam packed with recipes and they give you options to make each recipe about 4 ways. by changing the meat or veggie or other ingredients.
i swear by it.

it's sooooo easy to search for a recipe by using keywords instead of thumbing thru recipe books.
