I am trying to learn how to can and I notice that a canning rack plays a role in the canning process. I do not have a canning rack and I want to know how essential or important it is and what purpose it serves. Does it merely keep the jars from chattering as pockets of steam build up underneath them? Does their disruption pose a safety or freshness hazard? In other words can I get away without one?

In both pressure canning and water bath canning the rack keeps the jars off the direct surface of the pot bottom, they are less likely to break during processing. It also helps with the rattling together of the jars during processing.
What you can't get away from is current canning safety instructions. Try the Ball canning recipe book, or go online for info, also try your local extension agency for safety tips.
Canning is wonderful and enjoyable, but can also be very dangerous unless you know exactly what you're doing.

Fraid Not! The rack allows the jars to heat evenly (from the water). Setting the jars directly on bottom of your canning pan could cause them to crack.

That said, it does not have to be a "Canning Rack" I use a small cake cooling rack in one of my smaller kettles. Just make sure your jars cannot fall off the edge.

with out a rack the jars will be in contact with the pan and heat source and over heat and break.

YOU HAVE TO USE A RACK, IF NOT YOUR JARS WILL EXPLODE. THEY CANNOT TOUCH THE BOTTOM OF THE POT.

You have to have it - I have been canning for years, I hope you find it a lot of fun.

They are pretty cheap to buy see below.
