Well obviously the Celts ascribed special importance to mistletoe - and you can kiss your spouse under it!. A cake with a model of stonehenge maybe. Tables positioned according to Ley Lines. The person presiding over the ceremony dressed as a druid. Invitations/table-settings with Celtic writing eg like in the Book of Kells. You should steer clear of the rituals involving human sacrifice though - or even the killing of a cockerel - probably would offend a few guests

when u say celtic? which ones? irish? or just the magical world of celts?!
at home (mayo), they have straw boys. set dancers who act the eejit and do set dances with their heads covered in straw. thats a weird in wonderful ritual for ya!!

Welsh: harp, male voice choir, dafoddils, love spoons, folk band, Welsh language, Welsh kilt
Irish: folk music, shamrocks, Guiness, Irish kilt
Scottish: kilts, bagpipes, haggis

I believe the maypole is a celtic tradition. I know it has something to do with fertility, good luck and celebrating the new spring. It might add a nice touch to your wedding.
