You could say " Holy Jeezzzzzz, thanks a lot but with all the oil on the Chips I'll have Diarrhea in about 10 minutes.

You never refuse food made especially for you, unless it is something to which you are allergic, or something you have a moral reason not to eat. I have refused to be served meat, because I don't eat meat. Otherwise, if it's just something yucky, you just explain that you aren't that hungry, take a small portion, and nibble it a bit, after which you can use the "scatter technique". I have actually emptied a plate under a bush at a cookout, careful to cover the food so it isn't found.

"Oh, Grandma, that's so sweet of you to make food for me! But I have had an upset stomach today, so I hope you won't mind if I save the food for later. "
(Smile sweetly and store the food in the refrigerator and when she leaves, give the food to the dog or cat or throw it away.)

You could refuse in a polite manner that you don't like certain thing in your food, but try to sample others.

I say I'm allergic to {whatever it is}.

I'm not really allergic to anything, but if I don't like something (especially peppers, onions or mushrooms), I don't want to eat it just to be polite.

You could say "Thank you, but I don't eat foods cooked in oil (or whatever) as they disagree with me".
