Because they don't like being lumped in with the rest of the creatures on the planet. They want to feel special so they deny facts. Remember how they behave. They're rather like adults that haven't grown up yet. Think about it. They rely on this fictional scarey god to tell them what to do because its much easier than relying on themselves and their brains. It means they don't have to take responsibility because they will be "punished" for doing things wrong the way that a parent will punish a child.
Its disturbing.

Because they can not understand anybody or thing that claims to know god better than they do, including the possibility that a god may have created other things in his image as well. If they did, then they would cease to be special - and that would niggle their little egos.
Its the same with non Christian men (and women, they are not chosen, so what chance do animals stand. Of course having such a narrow knowledge base as the Bible, it is difficult for any hard core religious follower to understand anything that has a science concept. The process of rational thought applied to observation is not something that comes naturally to anybody who has had their every thought dictated.
What chance does Darwin stand, against such a closed mind.

We are animals (mammals to be precise), but we are the only animals into which God has breathed life (soul) into. Because we have the life of God in us, we are called to more than just animals.
Man is the only animal that can be more of who he or she is. A cat or dog cannot be more of a cat or dog, but a human can be more of a human.
